Christmas Cookie Week: Gumdrop Cookies...


Welcome to the 2nd Annual Christmas Cookie Week here at Echoes of Laughter! This year, my friend Grace from Sense & Simplicity and I are hosting another super fun Christmas Cookie week. Each day this week we will be sharing a yummy cookie or bar recipe with you in hopes of inspiring and motivating you to get some Christmas baking done early!

Today I am sharing a cookie recipe that is loaded with one of our family's favourite candies...the gumdrop. My mother makes gumdrop cakes every year at Christmas and mails one to us and we love that yummy pound cake loaded with these jelly candies. And although I have left the gumdrop cake making to the expert, I do like this easy drop cookie recipe which comes from my Aunt Zelma. This recipe makes a delicious, chewy cookie with the added fun of gumdrops. The colours make it a wonderful addition to any cookie platter.
 Gumdrop Cookies
{makes approx. 3 dozen cookies}

Ingredients
1 cup butter
1 cup white sugar
1/2 cup brown sugar
1 egg
1 1/2 cup all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon baking powder
1/2 cup coconut
1-1/2 cups gumdrops, chopped {don't use black or white ones...they don't look pretty in a cookie}
1 cup rolled oats
coarse sugar for sprinkling on tops, if desired

Directions:

1. Preheat over to 375. Spray two cookie sheets lightly with cooking spray

2. In medium bowl, cream together butter, white sugar, brown sugar and egg.

3. In another bowl, stir together flour, baking soda, salt, and baking powder.

4. Stir flour mixture into butter mixture until combined.

5. Stir in gumdrops, coconut and rolled oats.

6. Drop by teaspoonfuls onto greased cookie sheets. Press down with a fork. Sprinkle with coarse sugar.

7. Bake for 10 minutes or until cookies are golden brown around edges.


These cookies freeze well. They also make an awesome cookie to leave for Santa too!
