Homemade Poutine with the New Kraft Shredded Cheese with A Touch of Philadelphia Cheese

On the weekends, I often take a more relaxed approach to meals by making a treat that we might not have for a regular Monday-Friday meal. The classic Canadian dish ...Poutine...is a really fun and delicious dish that we sometimes create on weekends. It's something that we enjoy on a Saturday night when we have a family movie night. And with a few ingredients, it's a very simple dish to put together and it's something that everybody loves!
This dish is flexible in so many ways. It can be created with homemade fries or store bought fries, homemade gravy or store bought gravy and it can be covered with whatever cheese you desire. This dish is really all about the crispy fries and the delicious cheese that is melted perfectly on top! Recently I had the chance to try the new Kraft Shredded Cheese with a Touch of Philadelphia and it produced the most gorgeous melt on our poutine. It was absolutely heavenly! Kraft has specially blended their Kraft Shredded Cheese with a Touch of Philadelphia to deliver a soft and creamy melt that will make your favourite meals even better. Available in 3 delicious kinds including:Creamy Mozza, Creamy Herb & Garlic and Creamy Mexicana, this new cheese is so good that the melt is all you'll remember!  Here is how we make poutine at our house:

Homemade Poutine
{serves 4}

Ingredients
5-large russet potatoes, cut into fries with knife or mandolin slicer, lightly drizzled with oil, sprinkled with salt and cooked on a greased cookie sheet in 400 degree oven 20-25 minutes OR frozen french fries cooked according to package directions.
2-3 cups gravy, homemade, canned or powdered mix,  made according to package directions.
2 cups Kraft Creamy Herb & Garlic Shredded Cheese with a Touch of Philadelphia.

To Make:
1. Cook fries until golden and crispy
2. Remove fries from oven and divide amongst 4 individual heat-proof dishes.
3. Spoon hot gravy over top according to taste.
4. Sprinkle with shredded cheese and place back in oven for 5-7 minutes so that the cheese can melt over the fries.
5. Remove and serve immediately.

The poutine looks and tastes so good!
Everyone in my family loved this new cheese and the poutine disappeared quite quickly.
I mean seriously...look at these fries! Delish!

Chicken Clubhouse Bites on Skewers with Sriracha Mayo Dipping Sauce

At my house, simple food rules when people are hungry and want something to eat fast. These yummy skewers are de-constructed clubhouse sandwiches with a delicious sriracha mayo dipping sauce that adds just enough spice  to perfectly marry the flavours of the chicken, ham, tomato and cheese.These bites can easily be made ahead of time and served as an afterschool snack or as an appetizer with frosty drinks. My son and husband love these and eat them almost as fast as I can make them. And sriracha mayo dipping sauce...oh my word! Have you tried this? It is so good with chicken, french fries, sushi and fish. My family loves sriracha sauce on a lot of different foods!
These are very easy to assemble and can be customized to include cubes of your favourite cheese.
And although you don't really need a recipe for these because the picture shows how it all goes together, a list of the ingredients is really helpful.

Chicken Clubhouse Skewers with Sriracha Mayo Dipping Sauce

Ingredients:
For the skewers:
Dill pickles, cut in chunks
Chicken breasts, cut into cubes
Cheddar Cheese, cut into cubes
Sliced ham, cut into pieces
Grape Tomatoes
Skewers

For the mayo:
1/2 cup mayo
1 tablespoon sriracha sauce

To make:
1. Thread chicken, tomatoes, ham, cheese and pickles on skewers as shown
2. To make the mayo, add sriracha sauce to mayo and mix until smooth. Serve with skewers for 
dipping.

Simple & delicious!
This is perfect to serve to a group of hungry teen boys.
Watch them dissapear!

Spinach Salad Bites

Hello dear friends! Lately I have been really into serving food in small size portions. There is just something fun about taking a dish and de-constructing it.These little Spinach Salad Bites are a fun spin on traditional spinach salad that can be served as an appetizer or snack.. With a little dipping sauce or drizzled salad dressing, they are a great way to get kids to try new foods too. They are also a great summer time appy for when days are warm and you like to serve something that is great with iced tea or wine and doesn`t require turning on an oven. And we do have those days coming soon...hot days where you don`t want to turn on the oven. Remember those? I love to serve these as an afterschool snack to my kiddos.
These little bites can be a great fun for kids to make too. And the ingredients can be changed up so that any kind of cheese or meat can be used. Although traditional spinach salads have bacon, I used a spicy salami instead to keep all of the ingredients simple. And this is a great way to "eat your greens" !

Spinach Salad Bites

Ingredients
Baby spinach leaves
Grape tomatoes
Spicy salami, ham, lean turkey, etc.
Boccocini or small cubes of cheese
Mini-skewers 
Balsamic salad dressing, or dressing of choice, such as ranch.

To make:
1. Start with a layer of 3-4 spinach leaves. Fold over and thread on skewer.
2. Add salami, cheese, more spinach leaves and finish with a cheese cube.
3. Drizzle with balsamic dressing or serve a dipping sauce such as ranch.
4. Serve or refrigerate for a few hours until serving time.

These are so, so good and don't take a lot of time to make. They would also make a great little lunchbox item too!

Crispy Curry Potato Skins with Mango Chutney Sour Cream

There is nothing we love more in winter for family togetherness than cuddling up with blankets and pillows and enjoying a delish hot appy and a good movie. With my kids being older and everyone having busy schedules, time together is very precious. And this appetizer is definitely a favourite, except this time I put a bit of a different twist on it with the help of some Patak's sauces by adding some curry to the skins and mixing up a crazy-good mango chutney sour cream dip. The blend of the spicy curry potato skins with the sweetness of the mango chutney is an absolutely amazing flavour combination, and it was a great way to mix in a little India for an Indian-themed movie night.
Although this appetizer takes a bit of time to make, the results are worth every minute it took to make it. One thing that I try to do is to prepare the potatoes ahead of time by placing them in the oven on a Saturday morning to bake while I go about eating breakfast and a few other chores. And before I know it, the potatoes are baked and ready to be made into a weekend treat.
Crispy Curry Potato Skins with Mango Chutney Sour Cream

Ingredients:

Baking Potatoes, allow 2 potatoes per person

Olive oil

Patak's Vindaloo Curry Sauce

Shredded cheddar cheese

Green onions, sliced

2 cups sour cream

1/2 cup Mango Chutney



Directions:

1. Bake potatoes in 400 oven until fork tender and skins are papery. {approx. 45-60 min} Mix together sour cream and mango chutney and refrigerate until serving time.

2. Remove to a cookie sheet and let cool for a few minutes.
3. Slice warm potatoes lengthwise and let cool more.
4. Using a spoon, scoop out potato flesh and then slice skins into wedges as shown.  Leave a little potato on each skin so the skin will hold the toppings.
5.In bowl, mix together 3/4 cup olive oil with 1-2 tablespoons of Patak's Vindaloo Curry Sauce to make a nice spiced oil. Brush skins with curry olive oil.
 6. Return skins to 400 oven and bake until skins are golden and crisp....20-25 minutes.
7. Remove skins from oven and sprinkle generously with cheese and green onions. Return to oven and bake until cheese melts...approx. 5-7 minutes. 
8. Remove from oven. Plate immediately and serve with mango chutney sour cream.
The mango chutney sour cream is sooo good! It would also be a great addition to fish tacos, sandwiches and paninis, as well as a great dipping sauce for shrimp.
The crispy curry skins are a sure way to jazz up a boring potato too!
My kids loved this new twist on an old favourite!
And what movie did we enjoy for our Indian-themed movie night? Slumdog Millionaire. The kids were pretty young when this movie came out, so they hadn't seen it. We chose this movie because it's about a Mumbai teenager and the fact that it's such a good story!

So yeah. Crispy Curry Potato Skins with Mango Chutney Sour Cream and Slumdog Millionaire.
They make a pretty awesome-sauce combination for a family movie night.
