Hello sweet friends!
Did you know that one of my favourite desserts during the dog days of summer heat is just a simple fresh fruit salad? It's cool, delicious, requires no baking, and it doesn't melt, which are all great advantages in the humid heat of summer. And a fruit salad served inside a hollowed out fruit shell makes it all the more appetizing and beautiful to look at.This dessert is so simple and only takes about 20 minutes to make. And all it requires is cut-up fresh fruit, and the juice of the pineapple.
Easy Festive Fruit Salad
Ingredients:
Chopped fresh fruit such as:
Pineapple
Strawberries
Green Grapes
Cantaloupe
or fresh fruit of your choice.
Directions:
1. Cut pineapple in half lengthwise with an electric knife.
2. Score pineapple with a paring knife by cutting around outside edge to form 'bowl'. Then score inside of pineapple with a grid pattern, as shown. Then remove pineapple chucks and place into bowl, and squeeze remaining pineapple juice into bowl. {Discard pineapple core pieces.}
3. To bowl of pineapple and juice, add other chopped fruit. Mix with pineapple juice to coat all fruit. Then scoop back into the pineapple shell. Cover with wrap and chill until serving time. If it's a supper hot day, serve on a big bowl of ice!
This sweet dessert looks so festive and fun...wonderful for entertaining or serving to the family!
