This entire breakfast is so easy to make with the right BBQ and tools, but let me come back to that in a minute. Let's get this breakfast rolling first, shall we?
This first step in the Bacon & Egg Cups is to cook the bacon. We usually cut our bacon in half, but you can easily cook the bacon in full strips. We cooked our bacon on this FLAT GRILL PLATE until it was nice and crispy.Make sure the bacon is just the way you like it before moving onto the next step!
While the bacon is cooking, give a 6 cup muffin tin a spray with a cooking oil. Then line the cups with the cooked bacon and crack an egg into each muffin cup. Season with salt & pepper.
Place the muffin tin on the BBQ GRILL on high heat.
COVER THE GRILL and let the eggs cook for 5-6 minutes or until eggs are cooked and set.
When eggs are almost done, some cheese slices can be added. Cover again and cook until cheese is melted...about a minute or two.
Remove the muffin tin from the grill and cover with BBQ cover to keep warm while the pancakes are being made.
Usually, when we go camping, I bring along our tried & true pancake recipe in a bag for easy preparation.It only takes a minute or two to make and makes the BEST fluffy pancakes.
Pancake Recipe Mix
(makes 8 regular pancakes or 16 mini pancakes)
1.5 cups flour
1 tablespoon sugar
3 tablespoons baking powder
1/2 teaspoon salt
1 egg, beaten
1 3/4 cups milk
2 tablespoons oil
1.Measure all dry ingredients right into a medium size bag.
2.When you are ready to make the pancakes, pour the dry ingredients into a large bowl.
3. In small bowl, mix together the beaten egg, milk and oil.
4. Make a well in the center of the dry ingredients. Pour in wet ingredients and mix gently until combined.
5. Heat griddle and pour 1/4 cup of batter to form each pancake. Let pancake cook for 3-4 minutes or until edges are brown and flip. Cook for another minute or two or until edge is brown. Remover from grill and serve.

My husband and I worked together with the Cadac Safari Chef Stove to create this meal. We cooked the bacon on the griddle plate and then removed it with a potholder and wiped it clean with paper towel. Then we added the BBQ grill to the stove to cook the eggs in the muffin tin. And lastly, we added the griddle plate back to stove to cook the pancakes.
It was great to have so many options with one stove to create a meal!
